Having been making this top probiotic food since 2006, initially for personal use to improve gut health, we started producing it on a larger scale eleven years later. Since then, it has grown into a product enjoyed by many customers.
Making Kefir isn’t difficult, but the process requires meticulous attention to detail. Every tool and piece of equipment, from preparation and fermentation to packaging, must be super clean and sanitized, with no shortcuts taken at any stage.
The hardest part is knowing when it's ready, specifically when to stop the fermentation process. If fermented too long, Kefir becomes more tangy and sharp, with the curds separating from the whey, losing the smooth consistency achieved with just the right amount of fermentation.
The upside of this is that over-fermented Kefir is richer in beneficial bacteria and yeast. However, most of Daissy's customers prefer a slightly tangy, smooth Kefir.
